SUBSTANCE: clean the skins of commercial fish, wash them with water, freeze, crush and mix. Analyze the resulting raw material by controlling the content of moisture, ash and fat in the raw materials, use a homogenized product containing not more than 55 % water, no more than 3 % ash, and less than 1 % fat. Rinse the prepared homogenized product with water. Chemical isolation of collagen hydrolyzate is carried out by pouring 2–3 % with a solution of sodium hydroxide at the water duty 1:2–1:5. Hold the mixture for 20–24 hours. Neutralize with acetic acid, filter the product from impurities and form a dry form. If it is necessary to store the liquid substance, it is additionally carried out by acidifying it with a solution of acetic acid to 3 % after the filtration step. Invention consists in the preparation of collagen hydrolyzate with an average molecular weight less than 15 kD, with a predominant collagen content with an average molecular weight ≤ 7 kDa and the parameters: humidity (max, %) – 7.0; ash content (max, %) – 2.0, fats (max, %) – 0.3, pH (10 % solution) – 5.5–6.5, solubility in water – complete, sieving – very fast, enzymatic activity – absence, type of solution – slight turbidity, powder color – ivory, smell and taste – neutral.

EFFECT: method for producing fish collagen hydrolyzate is proposed.
