FIELD: food industry.
SUBSTANCE: invention relates to fat and oil industry. In the method, an emulsion containing water, and: from about 38 to about 60.94 % by weight of menthol from the total weight of the emulsion, excluding the weight of water; from about 39 to about 61.94 % by weight of gum arabic, including gum arabic from the Acacia seyal plant, based on the total weight of the emulsion excluding the weight of water; from about 0.06 to about 0.22 % by weight of the dried saponin-containing extract, based on the total weight of the emulsion, excluding the weight of water; wherein the water is supplied in an amount in the range of from about 45 to about 50 % by weight of the total weight of the emulsion. Above dried particle comprising: about 30 to about 54.94 % by weight of menthol from the total particle weight; from about 45 to about 69.94 % by weight of gum arabic, including gum arabic from the Acacia seyal plant, based on the total weight of the particle; and from about 0.06 to about 0.22 % by weight of the dried extract from the total weight of the particle. Also, a food item comprising dried particles.
EFFECT: invention makes it possible to obtain formulations containing high concentrations of menthol using cheap and natural ingredients while maintaining the excellent flow properties of spray-dried particles.
