FIELD: food industry. SUBSTANCE: invention proposes fat-like filling agent containing microcrystalline cellulose and galactomannan gum, in part, guar gum as spheroidal particles at mean size 0.1-100 mcm. This agent can be used as low-calorie fat-like material in some foodstuffs. Composition can contain also the third edible component, for example, lipophilic or hydrophilic material - protein material or polysaccharide, or their mixtures. Proposed agent in colloidal state is added to other foodstuffs as fat substituent component. Spherical particles of agent can be subjected for effect of high energy shift force to obtain the fibrous material that after its dispersing in water makes fat-like properties in foodstuffs also.
