"Piquant" cutlets of functional purpose include meat cutlet beef, raw tallow, bulb onions, bread crumbs, wheat bread, culinary salt, ground black pepper, water, additionally contain grounded fenugreek seeds. Quantitative ratio of initial components of cutlets is selected.
EFFECT: production of a food product with high organoleptic indices, increased content of protein enriched with food fibers and mineral substances for functional nutrition.
