FIELD: food industry.
SUBSTANCE: invention relates to production of meat semi-products. Proposed is a meat semi-product in the form of a cutlet wrapped in bacon, which is a formed cutlet consisting of minced meat obtained from chicken meat with chilled skin, side frozen pork fat, long loaf soaked in water, bulb onions, animal pork protein, fiber, seasonings in the form of culinary food salt, ground black pepper, spice "Zanebruvurst kombi", wrapped with two strips of bacon criss-cross, at the following content of initial components for preparation of 129 kg of meat semi-product: chilled chicken meat with skin—72 kg; side frozen pork fat—8 kg; long loaf—3.6 kg; long loaf soaking water—6 l; bulb onions—6 kg; culinary food salt—1.2 kg; ground black pepper—0.2 kg; animal pork protein—0.6 kg; fiber—0.2 kg; sliced bacon—30 kg; spice "Zanebruvurst kombi"—1.2 kg.
EFFECT: invention enables to create a semi-product having a balanced amount of proteins, fats, carbohydrates, with increased nutritive value and improved organoleptic properties, as well as expansion of the range of meat semi-products.
