SUBSTANCE: invention relates to food industry. Proposed method for producing ice cream containing chia seeds involves introducing into the resulting product nanostructured seeds chia in sodium alginate, or in carrageenan, or in konjac gum, or in sodium carboxymethylcellulose, or in gellan gum, based on 4 g of nanostructured additive per 1,000 g of finished ice cream.
EFFECT: invention allows to obtain ice cream with organoleptic characteristics characteristic of this type of product, without foreign flavors and odors, enriched with a nanostructured chia seed additive.
