FIELD: food industry.
SUBSTANCE: invention relates to a process for the production of dairy products. Method for producing a milk-based product comprises a step of providing milk raw materials, changing the ratio of the amount of casein to the total amount of proteins in the dairy feed to less than 0.80, or 0.70 or less, or 0.60 or less, or 0.50 or less, or 0.40 or less, or 0.20 or less. Heat treatment of the milk raw material is then carried out with a changed ratio of the amount of casein to the total amount of proteins at a temperature of at least 150 °C, namely, at least 155 °C, more specifically at least 157 °C, for a time, at most, 0.3 s. After that, the dairy raw material which has passed the heat treatment is cooled to produce a milk-based product.
EFFECT: change in the ratio of the amount of casein to the total amount of proteins makes it possible to obtain a dairy product of long-term storage at room temperature, in which the activity of protease – plasmin is reduced, which allows improving the taste of the product and avoiding the taste of boiling in the product.
