FIELD: food industry.

SUBSTANCE: present invention relates to a food processing apparatus. Claimed apparatus comprises an element for processing foodstuff, a light source configured to emit light having at least two wavelengths or two wavelength ranges, wherein the light source is additionally configured to direct light to the surface of at least the foodstuff, and a detector arranged to detect at least a portion of the light reflected from the surface of the foodstuff, and configured to generate output indicative of the detected intensity. In addition, the apparatus comprises a component for identifying a content property of the foodstuff, wherein the component is configured to determine the relationship between the generated output for one of at least two wavelengths or wavelength ranges and the generated output for the other or another one of at least two wavelengths or wavelength ranges. Component is additionally configured to compare the determined relationship with predetermined data to generate information indicative of the content property of the foodstuff.

EFFECT: creating an apparatus capable of identifying the characteristics of the composition of the food product and controlling the processing of the food product using information associated with the identified characteristic of the composition of the food product.
