FIELD: food industry.
SUBSTANCE: method and apparatus for detecting bone in meat identify fragments greater than about 1 mm, using reproduction of a spectral optical image and ultrasound. Reproduction of the spectral image can detect presence of extraneous material near the surface, and ultrasound can detect presence of material inside the sample. Sample is irradiated with light and reflected light or Raman scattering light is measured. Similarly, the sample is irradiated with ultrasound, and the reflected or transmitted sound waves give a set of points of amplitude data which include time delays. These data points are then processed by statistical methods to obtain a set of vectors in n-dimensional space, which are compared with a set of calibrated data of the obtained vectors, which have distinct identifiable locations for each type of surface and are indicators of the presence or absence of defects.
EFFECT: technical result when implementing the disclosed method is enabling reliable monitoring of even the smallest foreign fragments on the surface of the analyzed object in a given range.
