FIELD: physics.
SUBSTANCE: device includes a light source configured to emit light having, at least, two wavelengths or wavelength ranges. The light source is further configured to direct light onto the surface of, at least, the food product. The device also comprises a detector configured to detect, at least, a part of the reflected light and to generate an output signal that indicates the intensity of the detected reflected light. The device is made so that the corresponding output signals are generated for, at least, two wavelengths or wavelength ranges. The relationship between the output signal for one of, at least, two wavelengths or wavelength ranges and output signal for the other or one more of, at least, two wavelengths or wavelength ranges, indicates the chromatic property of the food product surface.
