FIELD: food industry.

SUBSTANCE: invention relates to the food industry, in particular to the production of combined meat and vegetable products, and can be used in the production of chopped semi-finished products or dishes from chopped meat. Method of obtaining round meat rissoles of functional purpose includes the preparation of ground meat based on beef, the preparation of additional components, their mixing, molding, flouring and cooking. As one of the additional components, a pre-rehydrated soy-mushroom granulate is used with a granulate:water ratio of 1:2. Granulate is obtained from an insoluble soy-mushroom residue. Mixing the components is carried out in accordance with the recipe, g: beef minced meat – 62.0; soy-mushroom granulated rehydrated – 13.0; onion – 10.0; bread crumbs –10.0; garlic – 1.0.

EFFECT: method allows to obtain round meat rissoles enriched with dietary fiber and minerals, with high organoleptic characteristics.
