FIELD: food industry.
SUBSTANCE: invention relates food industry, in particular, to chopped meat products with increased nutritive value for healthy, child, dietary and medical-and-preventive alimentation. The chopped meat products contain beef mince, hydrated girasol flour and culinary salt. Hydrated girasol flour is produced by way of girasol flour dilution in water at a ratio of 1:2-1:6 and then - heating up to 65-70°C during 30-50 minutes with subsequent cooling to room temperature. The components are taken at the specified ratio.
EFFECT: product composition contains inuline, pectin substances, cellular tissue, ferrum, phosphorus etc, has improved quality characteristics - high organoleptic indices, enhanced water-retaining capacity, juiciness and softness; the product manufacture technology simplification.
