FIELD: dairy industry.
SUBSTANCE: following is proposed: a method of production of a canned sweet dairy product which involves restoring skimmed milk powder, adding granulated sugar, filtering, pasteurizing the resulting mixture, cooling, adding a seed — fine-crystalline lactose in an amount of 0.2 kg per 1,000 kg of the finished product, crystallization and additional cooling of the finished product; 5–40% of granulated sugar is replaced with a sweetener, which is allulose, the product is prepared with the content of the initial components, kg per 1,000 kg of the finished product without taking losses into account: 273.75 of skimmed milk powder; 264.15–418.24 of granulated sugar; 22.01–176.10 of allulose with DM = 98.0%; 285.8 of water; 0.2 of fine crystalline lactose.
EFFECT: invention makes it possible to obtain a product with reduced calorie content.
