FIELD: fat and oil industry.
SUBSTANCE: invention relates to fat and oil industry. Method of obtaining a fatty product with a peppery taste, involving the selection and preparation of plant raw material from podded hot peppers of the genus Capsicum, grinding of dry peppers into a large fraction with a size in the range from 3 to 8 mm. Then choose food fat in the amount of one part, put it in a container and melt to a temperature from 70 to 75 °C, achieving uniform heating of the entire mass. After dry ground pepper is poured, in amount of from 1/10 to 1/5 of part, into melted fat, extraction is carried out for 1 to 3 hours keeping the temperature in the range from 70 to 75 °C, then the product, before cooling, is drained from the container and filtered, and then poured into containers.
EFFECT: invention allows to obtain a fatty product enriched with capsaicin, with a taste of melted fat and peppery taste with a delayed action, as well as having biological activity and a long shelf life of up to 3 years.
