FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to dairy industry. Enriched melted butter production method envisages butter cooking at temperature of 40–45 °C, its boiling in a water bath with subsequent manual removal of the denaturated protein and water with dissolved milk sugar or drowning butter at temperature of 40–50 °C, separation of water, milk protein and milk sugar with a centrifuge, followed by short-term heating in a vacuum boiler to 100 °C. With oil, after manual removal of denatured protein and water with dissolved milk sugar or after short-term heating in a vacuum boiler to 100 °C, not more than 5 wt. % is added of alcohol infusion of declared spicy aromatic plants or their various mixtures obtained by mixing powder of spice-aroma plants with alcohol in ratio of (5–10):1, stirring and infusing in a dark place for 7–14 days with or without filtration. One adds 1–5 wt. % of declared fat-soluble vitamins or their various mixtures, mechanical whipping during 5–30 minutes at 1000–5000 rpm and cooling as a result of aging at temperature from −5 to −10 °C for 12–48 hours.
EFFECT: method allows to increase biological value of the ready product.
