FIELD: coffee industry.
SUBSTANCE: invention relates to the coffee industry. In order to obtain capsules containing encapsulated composition containing coffee oil, the method is implemented as follows. Providing a first aqueous composition containing proteins and/or peptides and/or polysaccharides and/or polyphenols. Providing a second composition containing at least 60 wt. % of coffee oil. Composition containing coffee oil with an aqueous phase is optionally emulsified. First composition and second composition are mixed at pH below 7 to produce emulsion. Emulsion is optionally concentrated. pH is increased to 7 or higher by mixing the emulsion with the third composition at pH 7 or higher, which contains defatted milk or concentrated coffee extract having a weight content of the dry substance of the coffee extract in range of 1–4 %. Emulsion is optionally dried. First and/or second composition is substantially free or does not contain citrate and/or acetic compounds.
EFFECT: invention provides a capsule, which provides controlled/delayed release of aroma, capsule has high resistance to mechanical stress in combination with brittleness.
