SUBSTANCE: invention relates to confectionary industry. One proposes a method for production of marmalade containing nanostructured hawthorn extract in which 100 g of sugar is dissolved in 200 g of water and the mixture is boiled during 10 minutes, then add 2 g of agar-agar and cook for 5 more minutes, pour 50 g of apple puree and bring to a boil, cool down to 60 °C, adding 100 mg of nanostructured hawthorn extract in sodium alginate, or konjac gum, or carrageenan, or gellan gum, or sodium carboxymethyl cellulose, or agar-agar, or high- or low-esterified apple or citrus pectin and bottled.
EFFECT: invention allows to produce a high quality ready product containing nanostructured hawthorn extract.
