FIELD: food industry.

SUBSTANCE: present invention relates to a method for increasing heat resistance of gelatine when modifying it with glutaraldehyde and temperature. Method involves mixing 20 % gelatine solution with 0.1 % glutaraldehyde, prepared on isotonic solution of NaCl or distilled water, in volume ratio of solutions of 9:1 respectively, followed by incubation of mixture for 30 minutes at temperature 4 °C and exposing the mixture in a Petri dish for 30 minutes at 37 °C and humidity of 50–70 %.

EFFECT: disclosed method enables to obtain modified gelatine, having high temperature resistance for a long time.
