FIELD: milk washing.
SUBSTANCE: invention relates to dairy industry. Method of producing a preparation of microgranulated ideal whey protein comprises providing an ideal whey protein preparation, providing a cavitator, preliminary heating of the ideal whey protein preparation, cavitator treatment to produce a preparation of micro-granulated ideal whey protein containing β-lactoglobulin polymers with size of more than 200 kDa. Also described is a preparation prepared by said method and use of said preparation in milk products.
EFFECT: invention enables to obtain milk-based products with a creamy texture and a full flavour.
