FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to production of food additive for enrichment of food products with magnesium. Disclosed is a method of producing magnesium citrate, involving preparation of 9–11 % aqueous solution of citric acid, dispensing magnesium metal in form of chips at a weight ratio of citric acid: magnesium 4.8–5.0:1. Process was carried out at temperature from 16–18 °C to +45 °C with bringing pH of reaction mass to 7.0–7.1 with separation of solution, its evaporation and drying to constant weight.
EFFECT: disclosed method enables to obtain magnesium citrate with high output of citric acid starting material and magnesium chips with controlled parameters and reaction chemistry.
