SUBSTANCE: inventions relate to food and cosmetic industry. Encapsulated composition of amorphous calcium carbonate (ACC) for use in food compositions and cosmetic products contains multiple solid encapsulated ACC particles, each of which includes: i. core ACC containing ACC and at least one agent stabilizing ACC in amorphous form, and ii. encapsulating matrix comprising at least one coating layer, said at least one coating layer comprising an encapsulating agent selected from a group consisting of a film-forming polymer and a lipid, and wherein said at least one coating layer at least partially covers core ACC, wherein the film-forming polymer is selected from cellulose, a cellulose derivative, methyl methacrylate and any combination thereof, wherein the encapsulating matrix provides preservation of calcium carbonate in amorphous form under action of atmospheric moisture or water environment. Food product contains at least one of encapsulated ACC compositions.

EFFECT: invention enables to obtain encapsulated ACC compositions which are stable in water-containing and/or acid media, as well as at exposure to high temperatures.
