FIELD: food industry.
SUBSTANCE: group of inventions relates to coffee industry. To produce a liquid concentrate of coffee with pH from 4.8 to 6 with content of 1.25 mg/kg of dry substances or more 2-phenyl-3-(2-furyl)-2-propenal method is implemented as follows. One performs roasted ground coffee extraction with water to produce a coffee extract. Separated by fractionation during extraction, or extraction of aromatic substances after extraction to produce coffee extract with high content of aromatic substances and coffee extract with low content of aromatic substances. PH is increased by using anion-exchange resin to obtain a liquid coffee concentrate. Concentrating the extract with low content of aromatic substances to dry substances content of at least 10 wt. % and performing heat treatment, at least 25 wt. % of coffee concentrate at temperature of at least 150 °C with maximum exposure time of 15 minutes. Coffee concentrate with low content of aromatic substances is combined with a coffee extract with high content of aromatic substances.
EFFECT: group of inventions provides a product with improved quality, stable during storage, with good taste and aroma.
