FIELD: beverage preparation devices.
SUBSTANCE: invention relates to a method of treating an extract of a beverage ingredient. Disclosed is a method of treating an extract of a beverage ingredient, where the beverage ingredient extract is an aqueous extract containing high molecular weight compounds (HMW) selected from melanoidins and arabinoxylans, comprising the steps of: a. filtration of said extract from beverage ingredient to obtain extract retentate from beverage ingredient and extract permeate from beverage ingredient, which is carried out at temperature from 20 °C to 100 °C; b. increasing the pH of said retentate of the extract from the beverage ingredient to pH 7–14 while increasing temperature to 30–100 °C to provide a treated beverage ingredient extract retentate; and c. combining said treated beverage ingredient extract retentate with said beverage ingredient extract permeate to form a recombined ingredient extract.
EFFECT: invention provides prevention of the effect of aroma binding with HMW compounds, such as melanoidins and arabinoxylans, and inhibition of the agonist effect of HMW compounds with preservation of aromatic compounds in the end product with high output.
