FIELD: food industry.

SUBSTANCE: invention relates to coffee industry. Liquid coffee concentrate production method includes: a) providing a water extract of coffee with a low content of aromatic substances, having a first content of acrylamide, and in which ratio of 2,3-butanedione to ethylguaiacol is less than 30:1; b) providing an aqueous coffee extract with a high content of aromatic substances, in which ratio of 2,3-butanedione to ethylguaiacol is more than 30:1; c) contacting an aqueous coffee extract with a low aroma content with a selectively permeable membrane with respect to acrylamide by reverse osmosis or nanofiltration to obtain an aqueous coffee extract with a low aroma content having a second acrylamide content; and d) combining an aqueous extract of coffee with a low content of aromatic substances, having a second content of acrylamide, and an aqueous extract of coffee with a high content of aromatic substances to obtain a liquid coffee concentrate, wherein the second acrylamide content is lower than the first acrylamide content.

EFFECT: invention enables to provide a product with low content of acrylamide, which has less effect on the taste-and-flavour profile of the final coffee product.
