FIELD: food industry.

SUBSTANCE: invention relates to coffee industry. Liquid coffee concentrate production method includes: a) subjecting the roasted and ground coffee to a process of reducing flavouring substances to obtain (i) an aqueous coffee extract with a high content of flavouring substances, having ratio of 2,3-butanedione to ethylguaiacol of more than 30:1; and (ii) dearomatised roasted and ground coffee, b) providing a water extract of coffee with a low content of aromatic substances, having ratio of 2,3-butanedione to ethylguaiacol of less than 30:1, c) contacting an aqueous coffee extract with a low aroma content with a carbon and/or silica based resin with an adsorption function which is selective with respect to acrylamide, to obtain an aqueous coffee extract with a low aroma content having a second acrylamide content; and d) combining an aqueous extract of coffee with a low content of aromatic substances, having a second content of acrylamide, and water extract of coffee with high content of aromatic substances to obtain liquid coffee concentrate, wherein the second content of acrylamide is lower than the first content of acrylamide, in which the process of reducing flavouring substances includes bringing roasted and ground coffee into contact with steam, with subsequent recovery of flavouring substances from steam to obtain water extract of coffee with high content of flavouring substances, and in which an aqueous extract of coffee with a low content of aromatic substances, having a first content of acrylamide, is obtained by water extraction of dearomatised roasted and ground coffee, wherein water extraction is carried out at temperature from 200 to 260 °C at a holding time of 1 minute to 15 minutes.

EFFECT: invention makes it possible to provide a product with low content of acrylamide, which has less effect on aroma and taste profile of the final coffee product.
