FIELD: food industry.
SUBSTANCE: invention relates to winemaking industry, in particular, to method for holding whiskey distillates. Method involves exposure of distillate in two stages, at the first stage, the distillate is subjected to thermal treatment in the presence of greenhouse chips with continuous natural circulation of the distillate along the contour: bottom of the reservoir – heat exchanger – top of the reservoir – bottom of the reservoir, repeatedly alternating heating parts of distillate in heat exchanger to 50–80 °C and their subsequent cooling in the top of the reservoir by mixing with the distillate therein, slowly heating the next one to temperature of 40–50 °C, wherein exposure is carried out based on the fact that: treatment of not less than 5 days – in production of grain distillate, corresponding to quality and safety indicators, to three-year old grain distillate, at least 7 days – four-year exposure, at least 10 days – five-year exposure; not less than 15 days – seven-year exposure; at the second stage, maintenance is carried out in tanks filled with mixture of medium and strong roasting chips for at least three months with oxygen dosing in amount of 15–20 mg/dm3 or until content of extractive substances is not less than 0.7 g/dm3.
EFFECT: disclosed is a method for holding whiskey distillate.
