SUBSTANCE: invention relates to the food industry. Method of converting berry and/or fruit materials into fractions containing biologically active compounds involves steps, where at least one berries material or fruit material selected from berries, fruits, by-products, side fractions and waste materials obtained from berries or fruits, and any combinations thereof, is sieved, wherein the seed fraction is separated from the peel fraction, the seed fraction is subjected to grinding, where 2–40 wt. % surface layer of seeds is removed, seeds shell fraction containing said surface layer of seeds and fraction of polished seeds containing polished seeds are obtained, wherein fraction of shells of seeds contains biologically active phenol compounds. Berries are selected from the genus Rubus, Sorbus, Rosa, Empetrum, Aronia and Hippophae and from their combinations. Fruits are selected from the genus Vitis and Punica and their combinations.

EFFECT: obtained fractions of seed shells as agents with antimicrobial activity are used in cosmetics, hygiene products, nutraceutical products, food products, food additives, fodders for animals, packages and pharmaceutical products.
