FIELD: food industry.
SUBSTANCE: invention relates to brewing industry. Method for technological treatment of wort in a boiler includes the following stages: (a) providing: boiler (1) equipped with inlet opening (1u), and outlet (1d), heating means (2), gas bubbling system (3), (b) feeding wort from filtration step to said boiling boiler, wherein said wort temperature is below its boiling point; (c) simultaneously in bubbling of inert gas through wort heating said wort and holding it at a processing temperature Ta, which is higher than 97 °C, but lower than boiling point Tb during the process treatment period tarr, ranging from 15 to 90 min, but no longer than required for evaporation of not more than 4 wt. % of water initially present in wort, (d) transfer of prepared wort to stage of separation of breaks through outlet hole.
EFFECT: invention additionally reduces consumption of heat energy by eliminating conversion of liquid into vapour, as well as higher efficiency of separation and evaporation of volatile impurities.
