FIELD: measurement technology.
SUBSTANCE: invention relates to the product quality control during production of alcoholic and nonalcoholic beverages and can be used in control and analytical laboratories. Presence of cyanidin-3-O-glucoside is determined in a biotechnological liquid selected from alcoholic and nonalcoholic beverages. For this purpose, the analyzed sample is placed in a cuvet of a spectrophotometer for spectral analysis. Before placing the sample in the cuvet, the sample is diluted with an acidified solution of 8 % ethyl alcohol. Spectral analysis is carried out in a wide range of wavelengths from 350 to 650 nm. Obtained spectra are compared. Coincidence of the spectrum extremes of the analyzed sample with the spectrum of natural cyanidin-3-O-glucoside, the maximum peak of which is found at wavelength of 520 nm, confirms the presence of cyanidin-3-O-glucoside in the biotechnological liquid sample.
EFFECT: invention increases reliability of the method of identifying natural cyanidin-3-O-glucoside in alcoholic and alcohol-free beverages.
