FIELD: testing.
SUBSTANCE: invention relates to a method for express determination of the total content of anthocyans in fruit extracts. The method for express determination of the total content of anthocyans in fruit extracts containing 0.25 to 1.5% anthocyans, produced by extracting anthocyans from fruits with an aqueous-alcohol mixture containing 1.0% hydrochloric acid with a concentration of ethyl alcohol of 60% consists in visual comparison of the red colour of the analysed extracts with the proposed chromaticity scale based on solutions of cobalt chloride CoCl 2 × 6H2O with different colouring intensity and quantitative determination of the total content of anthocyans according to a calibration graph plotted in the coordinates of colour number, units/mass fraction of anthocyanins, %.
EFFECT: above method is simple and effective for express determination of the total content of anthocyans in fruit extracts containing 0.25 to 1.5% anthocyans.
