FIELD: food industry.
SUBSTANCE: invention relates to meat grinding in mincer grinder. Method is as follows: meat is fed into a meat mincer through a funnel and transferred to a rotating processing screw by means of a feeding screw to feed meat to the cutting device. Feeding screw initially rotates in the first direction. In case feed screw is overloaded, direction of its rotation is changed to opposite second direction for certain period of time, and then again changed back to first direction. Direction of rotation of the processing screw during rotation of the feeding screw in the second direction remains invariable.
EFFECT: method of meat mincing prevents jamming of meat during meat grinder operation.
