FIELD: meat industry.
SUBSTANCE: invention relates to meat industry, in particular, to technology for prolongation of high-quality storage of meat and by-products of reindeer. Treatment of surface of pre-cooled to temperature (-1)…(-3) °C product is carried out by means of fine aerosol spraying preservative, representing a colloidal solution prepared from reindeer fetlock joints and tendons at ratio of 1:2.5 to water with addition of 0.5 % of the volume of the solution of the natural low-molecular polysaccharide arabinogalactan, followed by deep freezing of the product to -28 °C and storage thereof at said temperature.
EFFECT: method allows to prevent oxidative and microbial processes, reduce weight loss of meat, by-products due to moisture retention, preserve their organoleptic indices, quality and extend storage life till final processing of raw materials without loss of taste properties of the product.
