FIELD: processing of animal raw materials.
SUBSTANCE: invention relates to processing of animal origin raw materials, namely, food by-products, and may be used in meat industry during manufacture of small lump semi-products from deer by-products. Method of preparation of small lump semi-finished products of offal deer is characterized in that by-products are washed, cleaned, milled by cutting into small pieces, adding phytonutrients and plant components, then mixing with subsequent cooling or freezing. Depending on the recipe, by-products are represented by meat and mucous food deer by-products with weight of not more than 20 g: liver, heart, diaphragm, kidneys, internal fat, tripe, mesh, manifold, abomasum and intestines. Phytonutrients used are common wormwood, celandine onions, parsley leaves. Vegetal components are represented by potatoes, cabbages, mushrooms and flour. Components of the semi-product of reindeer by-product are selected depending on the recipe in a certain ratio.
EFFECT: invention allows to produce a new product from low-used natural resource of reindeer breeding products with high organoleptic properties.
