FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Combined processing method for production of natural snack girasol product envisages aging of slices in a solution of organic, mainly ascorbic, acid or sodium citrate at temperature of 20–25 °C, thermal preliminary conditioning by means of treatment with ultrahigh frequency currents 2,450 MHz at container rotation frequency 30–50 Hz, time from 120 to 300 s, and finishing sparing thermal treatment of slices by means of infrared drying at temperature not higher than 55 °C.
EFFECT: invention allows to manufacture a product with high biological value without using fats, as well as improved organoleptic characteristics.
