SUBSTANCE: invention relates to air based frying device. Device (10) for frying starch-based foodstuffs based on air comprises cooking chamber (140) comprising outer wall (11), inner wall (14) defining food intake area (141) with air inlet (142) and air outlet opening (145), as well as channel (113) for circulation formed between outer wall (11) and inner wall (14); air heater (13) for air heating in cooking chamber (140); fan (192) for moving hot air flow in series through air inlet (142), food intake area (141), air outlet (145) and channel (113); steam generator (12) comprising at least one nozzle (127) extending from top to bottom into the food intake area (141) for spraying temperature-controlled steam (18) from top to bottom for food, b) hardening the surface food structure due to gelatinisation of starch by generating steam-controlled steam and spraying steam for food for a first predetermined period of time; c) cooking food by subsequent heating of air and circulating hot air for a second predetermined period, controller (15) configured to control a steam generator for steam spraying for food from top to bottom, placed in food intake space (141) during a first predetermined period time, and control of air heater (13) and fan (192) for circulation of hot air to food during next second preset period. Cooking chamber (11) additionally comprises dividing panel (144) dividing the food intake space (141) into two cooking zones. Steam generator (12) is made with possibility of being controlled for steam spraying for food located in any one or both cooking zones.
EFFECT: device allows to preserve food softness or crunchiness during consecutive cooking with hot air.
