FIELD: technological processes.

SUBSTANCE: molding drum comprises one or several cavities, each of which has wall with at least partially porous structure, and each cavity is connected to channel. Method of storage includes supply of cleaning fluid medium through channel, treatment of molding drum with bacteriostatic substance and storage of molding drum with bacteriostatic substance on molding drum and/or in molding drum. Prior to and/or during cleaning, pressure and/or flow rate of cleaning fluid medium is measured and pressure drop of cleaning fluid medium is measured through at least partially porous structure. Cleaning is performed and/or changed until reference value is achieved. Method of use includes removing molding drum from storage device, removal of bacteriostatic substance from molding drum, molding of products from initial food material and rotation of molding drum at this molding step. In molding interruption molding drum surface is soaked and molding is resumed. During interruption of molding, rotation of drum is maintained.

EFFECT: invention ensures compliance with hygienic requirements with lower costs.
