SUBSTANCE: method for preparation of a fermented milk product involves the following stages: providing a mixture comprising milk, a manganese compound in amount of 1 to 100 mg/l and at least one type of bacteria, comprising at least one type of Bifidobacteria consisting of Bifidobacterium animalis subsp. animalis and Bifidobacterium breve; fermentation of mixture to provide fermented milk product. Also disclosed is a fermented milk product and inoculum for use in the method.
EFFECT: inventions enable to stimulate growth of said Bifidobacterium subspecies in milk without requiring enrichment with peptides, which reduces the time required to achieve pH 5_5.
