FIELD: chemistry.
SUBSTANCE: invention relates to a method of producing an analogue of α-hydroxymethionine and derivatives thereof, comprising a step of contacting one or more sugars or derivatives thereof selected from a group consisting of glucose, fructose, galactose, mannose, sucrose, xylose, erythrose, erythrulose, threose, glycol aldehyde, methylvinyl glycolate, vinylglycol acid and 2-hydroxy-γ-butyrolactone, with a metal silicate composition in the presence of a compound containing sulfur of formula RSR', where R and R' have same values as specified above, and solvent at heating to temperature from 60 to 140 °C.
EFFECT: technical result is increase of target product yield.
