FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to production of confectionary products. Disclosed is a candy filling comprising a sugar-containing component, filler – girasol chips, dry milk, vegetable fat, which additionally contains orange oil, and as a sugar-containing component, girasol "Toba" syrup is used, vegetable fat is cocoa butter substitute "Ecolad", with the following ratio of initial components, wt%: "Toba" girasol syrup 14.0; powdered milk 8.0; cocoa butter substitute "Ecolad" 5.0; orange oil 3.0; chips of girasol – the rest.
EFFECT: invention allows to produce candy filling, which has high nutritive and biological value and organoleptic indices, is preventive product, strengthens immunity, bones and joints, heart, supports intestinal microflora, as enriched with vitamins, antioxidants, microelements and polysaccharide inulin, allows to increase storage life by 20 % of standard time, expand range of produced sweets, as well as confectionary products such as waffles, donuts, croissants, etc.
