SUBSTANCE: proposed chocolate product contains filling with a shell. The filling contains animal fat, selected from badger fat, groundhog fat, or bear fat. The content of the animal fat is from 0.91 to 50% of the finished product weight. In the preferable option, in the chocolate product, the total weight of the shell and body chocolate is 45.0-73.09 wt.%. The product also contains following components, wt.%: sugar 10.0-20.0; cream – 3.0-20.0; honey 10.0-20.0; butter 3.0-8.0. In the other preferable option, the chocolate product contains only animal fat and chocolate.
EFFECT: invention is aimed at expanding the range of confectionery products and increasing nutritional and biological value in comparison with traditional products.
