FIELD: food-processing industry, in particular, confectionery industry, more particular, production of glazed candies with filler.

SUBSTANCE: chocolate glazed candy has center made from fondant cream including filler made from food filler. Fondant cream contains sugar-containing component, syrup, milk component, powdered biologically active additive, vegetable fat, alcohol, cognac, and aromatizer "Vanilla". Candy also contains whole condensed milk as milk component, sand sugar as sugar-containing component, sweet dry cheese whey as powdered biologically active additive, and fruit filler as food filler. Components are used in the following ratio, wt%: chocolate glaze 19.02-20.46; sweet dry cheese whey 12.68-16.72; whole condensed milk 11.56-14.98; fruit filler 11.84-14.46; vegetable fat 5.48-7.54; syrup 4.02-5.62; alcohol 0.65-0,75; cognac 0.38-0.49; aromatizer "Vanilla" 0.05-0.07; sand sugar the balance with filler. Candy of such composition has increased viscosity and plasticity and increased content of calcium.

EFFECT: wider range of confectionery products of the given designation due to introducing of novel components into material of candy center, and improved quality of product.
