FIELD: biotechnology.
SUBSTANCE: invention represents variants of fusariotoxin splitting fusariotoxine carboxyl esterase polypeptides with SEQ ID No. 46, wherein the polypeptide versions on the N-terminal portion comprise an amino acid sequence shortened by 47 amino acids. Invention also relates to a fusariotoxin cleavage additive, containing at least one variant of polypeptide and, if necessary, at least one auxiliary substance; to use of versions of polypeptides or additive in food products and to method of hydrolytic splitting of at least one fusariotoxin.
EFFECT: disclosed are versions of polypeptides splitting fusariotoxins, containing their additive, use thereof and a method of splitting fusariotoxins.
