FIELD: coffee industry.

SUBSTANCE: method of producing a coffee drink in a beverage preparation apparatus is carried out as follows. In the apparatus, water having temperature of 2 to 30 °C is injected into a capsule containing a beverage composition. Beverage is released from the capsule into a container. Beverage composition contains roasted and ground coffee and a dried coffee extract produced by way of extraction of roasted and ground coffee with water at temperature below 60 °C. Weight ratio of the amount of roasted and ground coffee to the amount of dried coffee extract ranges from 5:1 to 1:1.

EFFECT: invention ensures production of cold brew coffee in which aroma and taste of traditional cold brew coffee is preserved, problem of beverage composition caking inside the capsule during extraction.
