SUBSTANCE: invention relates to a method for preparation of a natural taste-and-flavor base, as well as to a taste-and-flavor base produced using such method. Method for preparation of natural taste-and-flavor base composition involves cultivation of bacteria belonging to genus, selected from Corynebacterium, Arthrobacter, Brevibacterium or Microbacterium, in a culture medium to obtain and accumulate L-proline and/or a derivative thereof in a culture medium to a concentration of at least 1.0 wt % of a culture medium. Adding reducing sugar to the cultivation medium after the cultivation step. Thermal reaction of the medium for cultivation after addition of reducing sugar at temperature of 75–170 °C for at least 5 minutes. Regenerating sugar is added to the medium in quantitative ratio (by weight) of sugar: proline ranging from 1:5 to 10:1. Invention relates to application of natural taste-and-flavor base for imparting flavoring note of roasting to food product.

EFFECT: invention relates to a method for imparting a flavoring note of natural roasting to a food product by adding a natural flavor base to the formula of said food product.
