FIELD: food industry.
SUBSTANCE: invention relates to an air drying plant for air drying of cut food products. Plant consists of conveyor (10) for cut food products (1) forming transporting surface (11), plurality of blowing air ducts (20) with purging holes (21), directing treated air flow at rate of treatment with controlled temperature, which is between 4 °C and 60 °C, and controlled humidity; wherein conveyor comprises segments (12) of air treatment with conveying surfaces (11) facing said purging holes (21) and adjacent thereto, wherein said treated air flow is directed to said conveying surface (11) in upward or downward direction; and wherein conveyor (10) also comprises segments (13) without treatment, inserted between said air treatment segments (12), conveying surface (11) of which does not face blowing holes (21) and is not exposed to air flow.
EFFECT: proposed plant and method of drying provide for faster drying process and reduced power consumption.
