SUBSTANCE: disclosed is fermented seasoning, having concentration α-ketoglutaric acid from 0.3 mM to 10 mM, provided that fermented seasoning does not include fermented seasonings, containing raw materials, which are decomposed with hydrochloric acid, and fermented seasonings in which chicken is used as raw material, where fermented seasoning is seasoning, in which grain raw material is used, and where fermented seasoning is pasteurized or treated for bacteria removal. Method for imparting a characteristic feature of saturation cocaine to a fermented seasoning, including use of grain raw material for production of fermented seasoning; pasteurisation of fermented seasoning or treatment of fermented seasoning for bacteria removal; and adding from 0.3 mM to 10 mM α-ketoglutaric acid into fermented seasoning, provided that fermented seasoning does not include fermented seasonings containing raw material, which is decomposed with hydrochloric acid, and fermented seasonings in which chicken is used as raw material.
EFFECT: invention improves taste of fermented seasoning produced from grain raw materials, as well as eliminates bitterness of the obtained product.
