FIELD: food industry.
SUBSTANCE: invention relates to flour-and-cereals industry and feedstuff industry and is intended for production of lupine grain in the form of grit and flakes. Method for production of cereal products from lupine grain envisages grain cleaning from impurities, moistening, drying with infrared radiation and flattening. After cleaning, grains are optionally dried to moisture content of 10 ± 1 %, ground, subjected to pneumatic separation at air speed of 8 ± 3 m/s, and the core is scattered on sieves to obtain grits of specified fraction, grits (fractionated core) are moistened to moisture content of 21 ± 2 %, set aside for 12–24 hours, heated in a stream of infrared radiation to temperature of 100 ± 20 °C, flaked in flakes with thickness of 0.2 ± 0.1 mm and cooled.
EFFECT: invention reduces processing time by 10–20 hours, reduces energy consumption for drying and subsequent heat treatment and ensures quality grains and flakes production.
