FIELD: food industry.

SUBSTANCE: invention relates to the food industry. Milled cake is treated with ethyl alcohol in a microwave unit under vacuum for 5–10 minutes with rotation of drum 34–40 rpm, power of microwave radiation generator 500–750 W/kg, temperature 38–40 °C and residual pressure 150–170 mm Hg. Then cedar protein is separated from miscella by filtration. Residues of alcohol are distilled under vacuum at 30–40 °C. Cake is crushed and sorted on sieves.

EFFECT: invention ensures reduction of technological process duration, production of maximally defatted protein product of cedar nut cake with preservation of biologically active substances and organoleptic properties, increase of ready product storage life.
