FIELD: food industry.
SUBSTANCE: method includes milled cedar nuts extraction by water. At the beginning of the process one performs cedar nuts decontamination, calibration, decortication, removal of fruit and seed coats; before extraction one mills the peeled kernels of cedar nuts in a disintegrator to produce 400-600 mcm size particles. The nut mass extraction is performed by water at a temperature of 70-80°C during 40-60 minutes, the weight ratio of material to solution being 1:8 - 1:10; then the prepared mixture is separated in a centrifuge with production of cedar oil and a protein-carbohydrate sediment.
EFFECT: invention allows to extract the maximum of high quality cedar oil and produce a protein-carbohydrate product enriched with proteins, starch, cellulose, mineral components and other valuable substances.
