FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology, particularly to a method of producing a fermentation product. Carbohydrates source is fermented in fermentation medium in an aqueous fermentation medium in a fermentation reactor by means of a microorganism capable of converting carbohydrate into a fermentation product, wherein the fermentation product is a salt or a product with a boiling point higher than the boiling point of water. During fermentation part of fermentation medium containing biomass is extracted in form of return flow. Return flow is supplied into vessel under pressure, in which pressure is selected so that temperature of return flow is reduced by evaporation of water by value 1–8 °C as compared to fermentation medium temperature in fermentation reactor. Return flow is returned to the fermentation reactor by recycling.
EFFECT: invention enables to control temperature of fermentation broth in reactor at desired temperature level with deviation of 0_1 °C, to obtain a uniform temperature profile with limited occurrence of hot and cold spots inside the reactor, which leads to improved efficiency of the fermentation process.
